Pacific Oysters with Thai Dressing

Bright, refreshing & full of contrast, this Thai dressing is the perfect accompaniment to the naturally sweet and briny flavour of South Australian Pacific Oysters.

Ingredients

  • 12 South Australian Pacific Oysters

  • 2 tbsp fish sauce

  • 2 tbsp rice wine vinegar

  • 1 tbsp brown sugar

  • 2 tbsp lime juice, freshly squeezed

  • 1 small red bird’s eye chilli, deseeded & finely chopped

  • 1 tbsp coriander, roughly chopped (for garnish)

  • 1 small spring onion, finely sliced (for garnish)

Method

  1. Mix brown sugar, fish sauce, rice wine vinegar, chilli & lime juice in a small bowl until the sugar is dissolved.

  2. Arrange oysters on a bed of rock salt. Drizzle dressing over the oysters & garnish with spring onions and/or coriander.

This recipe makes ½ cup of dressing, so if extrais required, double the quantities to serve on additional oysters.
